If gods could eat, they would eat this quiche. I doubt very much that Hera cooked but if she did I’m sure this dish would have made Zeus very happy. He wouldn’t have been able to resist the Ontario fiddleheads.
Pie crust
2 cups washed, trimmed and chopped fiddleheads
1/2 cup chopped pitted black olives
6 halved pitted black olives
1 Vidalia onion chopped
3/4 cup shredded medium cheddar
4 eggs
2 tbls flour
1 cup 1/2 and 1/2 cream
1 tbls Dijon mustard
Sprigs of fresh thyme and tarragon
Nutmeg
Salt and pepper
Olive oil
-Sauté fiddleheads and onion in olive oil
-Place fiddleheads and onions in pie crust, top with cheese and chopped olives
-Mix eggs in bowl and add flour, cream, mustard, chopped thyme, chopped tarragon, nutmeg, salt and pepper.
-Pour over fiddlehead mixture and arrange olive halves over pie.
-Bake at 350 for 40 to 50 minutes until done. Check with knife in centre of pie, when comes out dry it is done. Garnish top with fresh chopped tarragon and thyme.
