Homer Simpson once said, “All normal people love meat.  If I went to a barbeque and there was no meat, I would say ‘Yo Goober! Where’s the meat?’ I’m trying to impress people here Lisa. You don’t win friends with salad.”

It’s clear that Homer Simpson hasn’t tried this salad.  T served it with his Ambrosia Quiche and it was a perfect complement.

Stack a slice of leaf lettuce, a slice of tomato, a thin slice of red onion, baby cucumber, trimmed

Dressing:

-In saucepan over low heat reduce 1/4 cup “Auntie Avril’s Seville orange marmalade*” (making sure to include one slice of orange rind per serving) and a quarter cup good balsamic vinegar to about half original volume.
-top each stack with slice of orange rind from reduction
-drizzle dressing over salad stacks
-drizzle olive oil over all and salt and pepper to taste

 

 

 

 

 

 

 

 

 

 

 

 

 

 

*perhaps we can persuade Auntie Avril to give up her Seville orange marmalade recipe, but if not, you’ll have to substitute with the lesser, store-bought brands.
